Parsnips and my easy recipe

Parsnips
Originally uploaded by pin add

Ah, the humble parsnip. Parsnips remained a mystery to me until about 5 years ago, when a relative showed me how to prepare them.
Let me tell you, parsnips are delicious.
Her directions are: peel them and slice thin, about five slices per inch.
Boil water, put in parsnips and cook them on low boil for 5 to 10 minutes.
Drain and add butter, salt and pepper.
Now isn't that easy peasy? Well some of you probably are amused with me, since you have cooked parsnips for many years.
Some people mash them; I like parsnips just as described here, and don't mash them.
Now who will share with me here the mysteries of cooking turnips and rutabagas?

I like my parsnips done with some carrots. Peeled, cut in lengths of about 3 inches and sliced in .. oh, say... 4s... then toss them all in a stainless pan with some melted butter. I also like a sprinkle of sweet basil, and some freshly ground pepper. Lift and turn to coat with butter... and leave on medium heat for about 15 minutes... turning every so often. don't let 'em burn! Later..I sometimes even put on a lid... so it is kind of sauteed/steamed I guess. Anyway..they are lovely.

I also made something called Parsnip Puffs a few times... I think the recipe is on my food blog.

I love turnips in stew.....in home made soups... and also mash them... and have even mashed them and mixed them in with mashed spuds.... great any old way...

Oh, I Love parsnips! I learned about them several years ago at the Old Sturbridge Village in Massachusetts. A woman there told me they tasted like a honey-filled carrot and they do! I like to cut them in chunks, along with carrots and potatoes, coat them in olive oil with some rosemary and salt and roast them in the oven....YUM!

I love root vegetables. I like to pan fry parsnip coins in butter -- yum yum! And the secret to turnips? Just boil and mash VERY VERY WELL with about a ton of butter and a vat full of pepper. Again, so yummy!

(Gotta go eat now.)

I am a raw food person and I eat a lot of parsnips.. I use them to replace rice and they are very tasty! Packed full of good stuff that our bodies need.... Maybe I will try your recipe for my husband who is not yet 100% raw......

I do like parsnips..my Mother always put them in with carrots and potatoes in a pot roast. The rutabagas..well I only use them in a made from scratch vegetable beef soup that I make a couple of times a year. Rudabagas take quite a long time to cook. Either you like them or you don't ..I do:)

Do you know that I have never tried parsnips? I do love vegetables with a bit of salt, pepper, and butter though, so I may have to try them!

Thanks so much for visiting my wintery backyard!... Donna

Hi friends, I appreciate your comments here and got some more parsnips tips in your comments. Last night I was inspired by you to cut parsnips and rutabagas in chunks, coat them in olive oil and roast them in the oven as I baked a chicken. That was my first time to cook rutabagas! I found out we prefer parsnips but the rutabagas are good too.

What do they taste like? Are they similar to some other veggie?

Kylee asked how parsnips taste and that is hard to describe so I asked my husband and he says "nutty and starchy", and I agree. I would add maybe a tiny bit sweet.
I tried roasting them but prefer how I describe in this post, peeled and sliced, then cooking them in boiling water til tender.
